I’m looking at using the 32-Channel 8-Bit/12-Bit Analog to Digital Converter + XR Expansion Port for reading in 10K Type II RTD sensors. However, I’m somewhat confused because I don’t see anywhere what the resistance of the pull-up resistor is. What resistance is used and would it be suitable for the resistor as part of the voltage divider circuit for reading 10K Type II sensors?

The on-board pullup resistor is 10K so you can just hook the 10k type 2 sensors to the board without anything additional.
