Hi, i am looking to test several of the I2C Mini module (ambient light, thermocouple and CO) and was looking to see if there is a off the shelf enclosure that can be used with these Mini Modules?

No, we do not at this time offer any enclosures for the Mini module form factor. I believe previous users however have created their own using 3D printing technology.
