Best industrial sensor for measuring RH and Temp in an OVEN

Hi!
I’d like to track oven temp and Relative Humidity in an industrial oven getting up to 400 degrees F. Is there an NCD industrial packaged sensor on MQTT that will work for this application and not burn up with the heat?

Would it be possible to mount the sensor outside the oven then use a wired probe to monitor the temperature inside the oven?
